CilantroTomatillo Dressing

Just so you  know, I have a strong dislike for cilantro. It tastes like chemical to me. (There is a study out there about that.) My husband LOVES cilantro. Because I love my husband, I am learning to appreciate this herb.



While we were out in Utah my Mother-in-law took me to a restaurant called Bajio's. They had a cilantro dressing that was so yummy. I thought I could live with this. So I looked for a recipe and found this one.

Cilantro Tomatillo Dressing
1 pkg Hidden Valley Ranch Dressing mix
1 C buttermilk
1 C Mayo
1 to 2 tomatillos
1 clove garlic, minced
1/2 bunch cilantro, chopped
1/2 t lime juice
1/2 to 1 small jalapeno, seeds removed.

Blend all together in a blender or food processor and store in the refrigerator to let the flavors meld.I omitted the jalapeno.

I don't have a blender or food processor. (I should probably get one since my family is getting bigger. I just used my Magic Bullet.) The first time I made this I cut the recipe in half so that it would fit into my Bullet and it made enough for the company we had. The second time I made this, I forgot that I halved it and had to improvise my blending process.



 This dressing is yummy. Go make it today!
